where's the sun today man?

Yesterday I finished up our fundraiser donation.  I made a couple of organic cotton washcloths, packed them up, and sent them on their way.  The fundraiser will be benefiting the Cedarhill Animal Sanctuary in Caledonia, MS.


"Cedarhill currently gives lifetime sanctuary to over 300 animals, including:
lions, tigers, cougars, bobcats, wolves, horses, domestic cats, dogs, and pot-bellied pigs."

One of the groups that I'm part of on Etsy is Etsy for Animals, many of our members participate in fundraising and nominate their favorite/local charities to benefit.  Cedarhill is the one that was chosen this time.  The sanctuary I nominated was SASHA farm here in Michigan.  Another animal rescue that I love is Horses Haven, it's made of many loving hearts, human and equine.  I was fortunate to spend time there this summer volunteering and met many horses getting a second, loving chance at life.

I forgot to take a photo of dinner last night before we ate so I thought I'd share some recent breakfasts instead.  You've seen the giant bowl of oats that I'm partial to already.  These pancakes were a yummy weekend breakfast from The Garden of Vegan  the Orange-Poppy Seed Pancakes topped with some organic Earth Balance, real maple syrup and organic blueberries.   I love that these pancakes are full of chewyness from poppy seeds, rolled oats, and sunflower seeds.  They're also real thick and foolproof to cook up, I am not the best pancake cook ;)

ok, so speaking of sunflower seeds...there was a pancake leftover which I saved and warmed up in the toaster oven the next day.  I was busy digging in and looked down and saw this...

there was some serious greenness going on and there was not spinach in this flapjack!  Do you see it?  Mid-chew I said to hubby that something happened to the food, it was green...'I want to eat this so bad, it's yummy, but I can't.  I don't know why it's green!'  I know the words 'what is she talking about now???' are rolling around in his head, but he just smiles and says I'm sure it's fine.  I did what I do when I need any kind of info fast, haha  I googled it and sure enough sunflower seeds can turn green when baked, who knew?  apparently not me ;)  Totally trusting info from the internet I ate the rest of my snack =)  Take away note here is when you're feeling creative for St. Patty's day there's a way to make something festive without synthetic food coloring.

A sprouted grain bagel with vegan cream cheese, tomatoes, and enough black pepper to make your lips burn.  Yum.

I haven't been spinning up as many green smoothies in the mornings now that it's winter here, so this has been my go to for warmth in the morning.  I like to stir in whatever frozen fruit we have on hand to let it thaw and drown it in almond milk.

    Ok I suck at pancakes which is why i never make them! But yours look awesome. I am also GF and vegan (so not gluten puffing up flour OR eggs) & usually pancakes are not easy...but the orange in yours...nice.

    The chia seeds you just commented on. They are so NON essential to the recipe. Seriously. Totally omittable, dont let 2 Tbsp of seeds stop you from making a huge jass slab o' bars :)
