Here's the cashews soaking for the sauce. Also Averie's recipe calls for a bell pepper, but I didn't have one...mostly because I won't buy conventional ones and the organic red ones are hard to find this time of year, which is fine...I digress ;)
I wanted to share one of my current addictions when I'm not at home for a meal time/snack time to tide me over, I've been enjoying these from Raw Indulgence.
I bought a box of 12 at Whole Foods, they're on sale now (until about the 19th I think) 2/$3.00, and if you buy a case of anything you get 10% off...awesome score. They didn't have my fav flavor (raspberry) so I picked my second fav, the chocolate+coconut, yum.

here's dinner last night. We had the Quick Noodles with Miso Lemon Tahini Sauce from Extraveganza. It's a really quick dish to make which helped because I had dirty dishes all over the kitchen from prepping other things ;) The sauce was sooo good, and made with miso, so I love it for that alone. I added some lightly steamed (so they're still crunchy, but warm) broccoli and green beans, olives, and flax oil w/DHA. We have two giant bags of frozen broc and g.beans in our freezer from Costco that are so handy to make for dinner.
I also baked off some cookies that I made over the weekend, but didn't have time to bake them all then. They were intended to be the Lazy Samoas from Vegan Cookies Invade Your CookieJar. I used a combo of wheat and brown rice flour so they didn't keep the shape of the famous girlscout Samoas, and at that point I didn't want to mess with the fancy chocolate decorating, so I placed a carob chip on top (totally the same, right??) Anyway, they are tasty, full of coconut and flax goodness.
also, made my first batch of raw tahini for our dinner recipe and it went a little better than the cookies ;) It's a piece of cake to just let your FP do all the work.

here's my breakfast this morning. If it looks ridiculously big, that's because it is! It'll keep me full and warm since I'm going out to clear snow...and get some Vitamin D, yes the sun's out ;)
