wednesday, the floors are getting started day.

ok, so I didn't get any farther on the blanket.  I remembered that I committed to making something to donate to a fundraiser for an animal charity through Etsy for Animals, so I started on that project which I will finish today.  Photos of yesterday's lunch:

I felt I needed something alkalyzing after enjoying a big bowl of oats for breakfast. Put together a big plate of romaine, red onion, celery, homemade Parma!, flax oil w/DHA, a southwest Sunshine burger, and the piece de resistance...Averie's tahini vegan slaw dressing (if you make this, I dare you not to like love it)

oh, and lest I forget the rest of the kale love which I ate up while the buger was warming in the toaster oven.

this is our favorite flax oil.  We order it about once a month into Whole Foods.  I love the taste
so much that it's what I dress salads solely with many days.

on to dinner, we had salads of romaine and spinach with shredded golden beets, broccoli, cucumber, green onion, carrots, and olives...and you know, the usual homemade parma ;) dressed with the end of the jar of the aforementioned dressing with a litlle water mixed in to stretch it.

and a roasted sweet with Lemon Cardamom Rice with Green Peas from Extraveganza.  I was a little concerned making the rice that the cardamom would be overpowering (it's a strong fella), but no, it
was delish.  I topped the rice with a drizzle of flax and we both ate happily while we played along with
Wheel of Fortune and Jeopardy on tv...yes we have a terrible habit of eating in front of the tv, err.

how I make the 'sweet potato'.

serves 2 as a side
one large organic garnet yam, washed and roughly cubed
two huge cloves of garlic, minced
lil olive oil
cumin
dried ginger
pepper
red pepper flakes
(use whatever herbs you're drawn to that day, oregano and cayenne are also good)

place all ingredients in a bowl and toss them up.
bake in 375 oven for about 25-30 minutes, just check until your desired softness.  (we like to keep ours
with a little tooth to them)
remove from oven and mash up, so simple and tasty =)
