liquid gold, macaroons, spring!

This recipe is aptly named liquid gold dressing from The Raw Food Revolution Diet.  I love this uncook book more and more everyday!  Ours was a little more green than gold because I didn't peel our zucchini, it is so so delicious!

we dressed leftover greens with walnuts and red onions from our family get together this weekend, avocado, sunflower seeds, and raw sauerkraut.

The rest of dinner was Apple Carrot Soup with Coriander from Get It Ripe with last week's leftover Molasses Cornbread , recipe from same cookbook.  The bread and soup were a great combo.

Jae Steele has her new cookbook coming out in May I believe, Ripe From Around Here.  Pretty excited for this!

This Mighty Miso Soup from GIR we enjoyed a few days ago is really the best miso soup I've tasted.  I make it often and eat all the leftovers myself ;)

I made the Coleslaw from Raw Food Made Easy for 1 or 2 people again for our family fish fry this weekend.  One of my Uncles shares his fish catch from MI and Florida with the family (he really does make delicious fish, I don't partake anymore though)  It's nice to be outside in the sun enjoying the first days of spring all together.  I did have the time to salt and press the cabbage this time, it was easy and yummy.

We've also enjoyed the Quinoa Loaf with Mushrooms and Peas  from the current Whole Deal.  It was tasty, but I needed a little sauce for it so I stirred up some raw tahini, dijon, lemon juice, water, and nutritional yeast for topping the leftovers.  The sauce was perfect for me, some of my favorite flavors and I have a big love for nutritional yeast!

a salad with Bubbies and extra salad dressing from a quick dinner at Panera.  Waste not want not, right?

ok, this little snack is nothing new I'm sure, but it is SOOO tasty and will satisfy your sweet tooth.  Just open a date and use a dab of raw almond butter for the inside =)

I also made Dreena Burton's Double Chocolate Almond Explosion Cookies from Vive le Vegan!  (one of my favorites) for our family get together.  I did forget to take a picture and they're all gone.

and Bitt of Raw's Caramel Chip Macaroons  Oh my gosh are these delicious!  I've been craving macaroons for a bit and these are perfect.  Mine however were not completely raw, I don't have yacon syrup so I subbed with 1T of maple syrup and 1 T of brown rice syrup.  The crunch and flavor from the cacao nibs and the coconut butter is just great!  I love her blog, hop on over and check it out!

Half of these are going to my Mom and Dad, I like to make them healthy treats =) 

With spring here I've been back in the green smoothie groove.  Here's one with collards, banana, orange, cherries, ginger, and dates.
