fencing in the garden and chia breakfasts

my mornings have been started with this goodness lately.

It's soaked chia gel, vanilla powder and fresh banana and strawberries.  To make chia gel I use the ratio 1/3 cup seeds to 2 cups water.  It only takes about 20-30 minutes to gel, while it's gelling give it a couple of swirls.  I like to make it the night before so it's ready in the morning.  Yea for organic strawberries being back in season, in CA at least so far.

Here's the jars ready for the fridge.

our sauerkraut finished fermenting on the counter.  I did get a spot of mold on the rim of the jar on day 11, so I wiped it off and put in the refrigerator.  It smells awesome, but I have yet to taste any ;)  I keep forgetting it's in there...

A yummy addition to our salads this week have been thawed little peas, mmmm. I tried to buy a case of frozen ones yesterday at WF but they didn't have enough, I will try again, I LOVE peas.  Our dressing we've been enjoying this week is sweet dijon dressing from The Raw Food Revolution Diet

With our salad we had Savory French Lentils from ED & BV.  I had about a third of what I needed in French lentils so we had a mix with brown, tasted awesome anyway.  We eat it over brown rice with lots of lemon squeezed on.

I made a half batch of 'cottage cheese' with the leftover baked tofu.  The recipe is from The Ultimate Uncheese Cookbook.  I LOVE this, Dave won't touch it, but I think it's yummy.  The recipe calls for lots of onion powder and dill and was really good with the already spiced up tofu, I even enjoyed it with some fresh pineapple just like when I was a kiddo, but without the dairy.

a couple cool bulk items and our lovely Plum Creek reuseable bulk bags,  organic oats and organic yellow split peas (mmm, soup!) are on sale at our co-op this month.  Don't forget to shop your local co-ops, they have nutritious food and good deals.

our bulk spice stash is growing =)

Our completed fence around our little garden!  I'm so excited I don't have to worry about cats digging in it anymore!  This weekend we also top dressed the garden with another yard of compost.  We get our 'black gold' from the township for free.  The gentleman there will tell you it will grow tomatoes that look like watermelons ;)  He's right, it's super stuff!

Our chives came up again.

I thought maybe Marley would like to wear this Tigers hat, it's just his size

Turns out, he was really more interested in smelling it, I'm sure it smelled of DQ, it was Dave's sundae cup.  He's also showing off his shaved neck from his titer draw, I think it makes him look like a lion ;)

and the tofu from the last post...nice! how do you achieve "perfect" tofu? do you press it or just blot it? i like tofu that's like WFs very dense and chewy, not mushy. Whats your temp, flipping, covering or not strategies...any tips, would love em!
