I'm Still Here =)

I'm still here!  ...and not in the way that Joaquin Phoenix is still here..man I really hope he's doing alright.  I do love him, that was rough to watch.  What I mean is I'm still here blogging.  So, when I started this blog I was not working outside of the home and was much better at posting regularly.  I mean Earth Day went by and I didn't even post!  This last year I've added school and work to my life (I am still getting readjusted to the time management thing ;)  I love it and am having fun, but sometimes unfortunately that means putting off posting :/  It takes me a bit to get a post ready and my thoughts together, however I've been taking pics all along and am constantly composing posts in my head.  So I have a big backlog of pics on the computer that will hopefully make it out onto the blog!  Often times it's a choice between staying up or sleeping (this girl 99% of the time chooses sleep, she likes it). 
Things I've been up to:

I am loving them!  I have been mistaken for a Na'vi a couple times, which is cool awesome ;)

*making our first batch of raw granola

raw, sprouted, organic, and gluten free deliciousness!  I used the Crunchy Buckwheat Granola recipe from Raw Food Revolution Diet

and enjoyed for breakfast this morning with homemade almond milk, homemade almond butter, and strawberries

*making fresh batches of 'raw' almond butter makes me so happy.  This stuff seriously changed my life, it's that good

*celebrated my Daddio's BD (at Rochester Mills Brewing Company) I didn't take pics of my dinner, but they have a delicious salad and hummus plate that are vegan, among other vegan menu items.

(hubby, me, my Dad + Mom)  This was my second drink it what seems like ages.  Seems lately it just doesn't sound good to me.

*these have made quick treats with our super crunchy soaked and dried almonds

*and this organic sandwich has been eaten a few times from Zerbo's (ezekiel bread, sweet cashew cheese, cucumbers, sprouts, leaf lettuce, tomato, and avocado.

*dinner tonight was brown rice finished with Garlic Red Pepper miso (oh my, best miso to date!), raw collards, Eden tomatoes and cannellini beans with broccoli and peas, and asparagus.  Dinner was delicious and the asparagus was fabulous!  We don't eat asparagus but maybe a couple times a year.  Organic asparagus isn't is a lot of $, however I've gotten it on sale twice this spring and it is SO good.  We also like it sliced into rounds raw in our salads, fresh and crunchy.

Questions for the day for fun...

*Have you watched I'm still here/are you a Joaquin Phoenix fan?
I have with my jaw on the floor...I am, I love him.  He was actually at the time I began my vegan journey one of my main inspirations.  I kind of find his family fascinating.

*does asparagus make your pee smell crazy?
haha, yes, sometimes ;)

*do you love Shel Silverstein?
We do, so much.  The Giving Tree was/is one of my favorite childhood books, makes me cry each time.

-on a side note, if there are an unusual amount of typos tonight, I am not wearing my glasses and for fear of disturbing a couple of comfortable cats I didn't get up to get them ;)
